This week I’m back in the kitchen with one of the easiest, healthy, and inexpensive recipes you’ll ever find!

My fool-proof, quick and dreamy two-ingredient date syrup. Yes you heard it right! Just two, natural ingredients – dates and water. It can’t get any easier than this, and if you’re not a whiz in the kitchen then don’t worry – this natural sweetener doesn’t require any cooking. All you need is a good food processor and you’re good to go.

Be sure to buy the softest dates you can find and soak them overnight. This will make it easier to blend and create a smoother consistency. If you don’t have time – just soak in hot water for an hour. Try adding some of your favourite flavours to really boost the taste – how about fresh cinnamon, cocoa, or vanilla? If you prefer a thinner consistency, just try slowly adding a little water.

My two-ingredient date syrup is also naturally vegan, gluten-free, and full of goodness without any added nasties such as –

- Additives

- Glucose syrup (seriously why do they need to add this?)

- Fillers

- Binders

Pour it on pancakes, waffles and ice cream, or, add to yogurt or smoothies, or use as a natural sweetener for cakes and baking. The possibilities are endless!

Recipe – Two-ingredient date syrup

INGREDIENTS

1 cup of chopped, pitted, soft dates – soaked overnight in half a cup of water

1 cup of water

METHOD

1. Add the soaked dates to the food processor

2. Blend until smooth

3. Add 1 cup of water

4. Blend until fully combined

5. Pour into a glass container and refrigerate. Use within 3 to 4 days.
