Paper Moon Doha is pleased to announce the appointment of its new General Manager, Carmine De Riso and new Chef de Cuisine, Alessandro Esposito.

De Riso is a dynamic professional with over 12 years of experience in the luxury hospitality industry. Born in Italy, he kicked off his career there and swiftly rose through the ranks, holding several key managerial positions at five-star hotels and Michelin 3-star restaurants across the globe. Propelled forward by his passion and keen desire to deliver luxury experiences, his career called him to take on leadership positions alongside some of the most notable chefs in the world such as Gordon Ramsay, Alain Ducasse, Jason Atherton and Eric Ripert. De Riso also holds a number of Diplomas from prestigious educational institutes, including the Instituto Alberghiero “A Turi” in Italy where he earned a Diploma in Hospitality and Hotel Management, as well as the Court of Master Sommeliers where he qualified as an Advanced Certified Sommelier.

As an outstanding professional, confident leader and one who is well acquainted with the unique spirit of one of the best Italian restaurants in Doha, De Riso is excited to take the reins at Paper Moon Doha. He will be responsible for strengthening the restaurant’s premier position and driving its growth in regional and international markets for Italian food and service.

Alessandro Esposito, the new Chef de Cuisine at Paper Moon Doha, will be bringing over a decade of international industry expertise to his position. Chef Esposito is known for his outstanding ability to not just create delectable flavours, as well as for his talent to create memorable dining experiences for his guests. Having graduated from the Hotel Management School Duca Di Buonvicino in Naples, he kicked off his career at the five-star luxury hotel Della Regina Isabella in Ischia-Italy where he was training under Michelin-starred Chef Pasquale Palamaro. He quickly built his reputation at several other international chains including Four Seasons in the UK, Oblix at The Shard with Michelin-starred chef Fabienne Befoure, the iconic Quaglino’s in London and the Ritz Carlton Abama in Spain, holding positions that ranged from Chef the Partie, Sous Chef to Senior Sous Chef.

In his new role at Paper Moon Doha, Chef Esposito is treating guests to an amazing selection of delicious Italian dishes with his special touch and rich international experience that complement the warm and cozy ambience of the popular restaurant. Drawing from his roots, he revels in creating authentic Italian cuisine and takes great pride in providing guests with an extraordinary dining experience.
